Blackberry Spinach Salad

So goood. I used almonds instead of walnuts, garlic and herb feta (didnt have plain) and frozen blackberries and rasberries instead of fresh. I let the berries melt and then added to salad also with their juice. Next time I want to try to blend some berries to the juice to make it thicker.

This was very good. Fresh on a hot summer day! In the salad that I made I used half raspberries and half blackberries. I also used pecans instead of walnuts. I served it with raspberry vinaigrette. The entire party loved it.

This was a very delicious salad that my husband & I enjoyed. I didn’t have the edible flowers, but it didn’t need them. You can use about any dressing you want with this salad. I liked raspberry viniagrette with it, but my husband liked blue cheese.

I love blackberries, so I loved this recipe. It was fun to eat edible flowers too, although they didn’t really add much flavor.

Great salad, although a shame it did not have a home made dressing to go with it. I omitted the green onion (didn’t have any) and used sliced almonds in place of the walnuts.

Ingredients:

3 cups baby spinach, rinsed and dried
1 pint fresh blackberries
6 ounces crumbled feta cheese
1 pint cherry tomatoes, halved
1 green onion, sliced
1/4 cup finely chopped walnuts (optional)
1/2 cup edible flowers (optional).

Directions:

In a large bowl, toss together baby spinach, blackberries, feta cheese, cherry tomatoes, green onion, and walnuts. Garnish with edible flowers.
