1-BREAKFAST PIZZA WITH EGG

This recipe will make two pizzas. I came up with it by accident by throwing a bunch of ingredients together. We make it on the weekends at the lake for breakfast/brunch. You can modify toppings. I usually make one sausage and one Turkey bacon. Each pizza will serve 3 to 4 people.

Eggs, eggs, and eggs those American breakfast staples go Italian in this quick pizza. Be careful not to overcook the eggs–you’ll want to sop up the golden yolk with your crust.

Ingredients:

for 3-4 people (side dish, as part of breakfast, lunch or brunch)

4 slices of puff pastry (or part of a puff pastry roll) thawed
3 eggs
5 slices of Turkey bacon
3 slices of mature cheese (or grated cheese)
a handful of cherry tomatoes
Italian spices
pepper and salt

Preparation:

Preheat the oven to 180 ºC and cover a baking sheet with baking paper.

Stick the puff pastry slices together to create a large square. Fold the edges of the puff pastry so that it is slightly raised. Place 4 slices of Turkey bacon on the puff pastry. Tear the cheese into pieces and divide this over and around the bacon. Break the eggs above the puff pastry one by one. Season the breakfast pizza with salt and pepper. Halve the tomatoes and divide this over the breakfast pizza. Finally, divide the last slice of bacon, a little cheese and Italian herbs on the pizza.
Heat the breakfast pizza in the oven for 20 minutes until the puff pastry is cooked and the eggs are solidified.

2-Cauliflower Pizza Bites

Just like its big relative, cauliflower crust pizza, but better! Easy and fun to eat, it’s sure to be a crowd pleaser!

Ingredients

1 large head cauliflower, cut into large chunks
2 1/2 cups shredded mozzarella cheese, divided
1/2 cup freshly grated Parmesan cheese
1 egg
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/3 cup pizza sauce

Directions

Preheat oven to 425 degrees F (220 degrees C). Line a muffin tin with parchment paper squares.
Grate cauliflower into a microwave-safe bowl using a fine grater. Chop up any remaining pieces that are too small to grate but too big for the crust.
Microwave cauliflower until soft and tender, 4 to 6 minutes. Pour cauliflower into a clean dish towel cool easily handled, 15 to 20 minutes.
Wrap the towel around the cauliflower and squeeze out as much liquid as possible; the drier the cauliflower is, the better it will hold together as a crust once mixed with the other ingredients.
Combine cauliflower, 1 cup mozzarella cheese, Parmesan cheese, egg, salt, pepper, garlic powder, and onion powder in a large bowl.
Scoop cauliflower crust mixture into prepared muffin tin, dividing the mixture evenly among the cups. Pat down cauliflower mixture with the back of a spoon, making it compact.
Bake in the preheated oven until golden brown, about 15 minutes.
Spoon a small amount of pizza sauce onto each cauliflower crust. Top with remaining 1 1/2 cups mozzarella cheese, dividing evenly among the crusts.
Bake until golden brown and cheese is melted, about 15 minutes. Let sit in the pan for 5 minutes before moving each bite to a cooling rack. Let cool for 10 minutes. Peel parchment paper squares off the crusts and serve on a platter.

3-Taco Pizza

This is the best taco pizza we have ever eaten! I used precooked taco meat from our local grocery store and omitted the taco seasoning. I used one cup of mild cheddar cheese and one cup of mozzarella. Yummy!

Ingredient:

1 lb. ground beef
1 envelope taco seasoning mix
2 (8 oz.) cans Pillsbury crescent rolls
1 (16 oz.) can refried beans (I used the jalapeño kind)
2-3 cups shredded cheddar cheese or Mexican blend
1/2 cup chopped tomatoes
1/4 cup sliced black olives
4 green onions, chopped

Heat oven to 375 degrees.

How to make it:

Brown ground beef and drain. Add taco seasoning to the ground beef according to the package directions.

Unroll crescent rolls into rectangles. Place in ungreased 11 1/2 inch x 16 1/2 inch jelly roll pan or cookie sheet. Press dough over the bottom and 1/2 inch up sides to form crust. Bake at 375° oven for 11 to 13 minutes or just until golden brown.

Microwave beans in a microwave safe bowl for 1 minute. Carefully spread beans over warm crust creating a thin layer.

Top with cooked beef mixture, sprinkle with cheese followed by tomatoes, black olives, and green onion. Return to oven for 3-6 more minutes until cheese is melted. Serve immediately. Makes 12 main dish servings or 48 appetizers.

4-Open-Faced Pizza Burgers Recipe

In the late 60s, my mother scored on the recipe for pizza burgers from my elementary school. It is very similar to this recipe but has sage in lieu of the garlic. I’ve been making it for years for my kids and now my grandchildren. They beg for it. I have made it with bologna, hot dogs, or Spam. Spam seems to be the preferred luncheon meat.

Ingredients:

1 med onion chopped
1 tsp cooking oil
1 lb lean ground beef
1 can(s) (10)oz tomato soup
1/4 c water
1 Tbsp Italian seasoning
3 Tbsp butter
1 Tbsp garlic salt
32 slice pepperoni (chopped)
2 c shredded mozzarella

Directions:

Start by adding the onions and a drizzle of canola or vegetable oil in a large skillet on medium-high heat.
Heat through. Add the ground beef and cook all the way through.
Once the meat is cooked, add chopped pepperoni, add the tomato soup, water, and pizza seasoning.
Reduce to low and let simmer.
While the meat and sauce are simmering, preheat the oven on broil and spread the butter evenly on each
English muffin half. Sprinkle with garlic salt.
Pop these under the broiler on a cookie sheet for about 2 minutes or until they begin to brown just on the edges.
Take out of the oven and top each English muffin with about 1/4 cup of the meat and sauce mixture.
Top each of those with the cheese.
Place back under the broiler for another 2-3 minutes or until the cheese turns golden brown.
Enjoy!

5-Sausage Gravy Breakfast Pizza

I’ve made this recipe several times, using packaged crescent rolls or biscuits. Lots of variations, depending on what’s in your fridge. It’s always excellent! But do NOT try it with packaged pizza dough. Ick. Tough crust and hard to cut. The fluffy crust is better!

Ingredients

2 packages crescent rolls
1 package Jimmy Dean cooked sausage crumbles
1 envelope country gravy mix
6 eggs
2 tablespoons milk
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter
8 oz shredded cheddar cheese
4 oz shredded pepper Jack cheese

Directions :

1. Heat oven to 375. Separate crescent dough into 16 triangles and place on a greased, round pizza pan with points toward the center. Press onto the bottom and up the sides of pan to form a crust; seal seams. Bake for 11-13 minutes or until golden brown.

2. Meanwhile, prepare gravy according to package directions in a medium saucepan. Stir sausage crumbles into thickened gravy; set aside.

3. In a small bowl, whisk together the eggs, milk, salt, and pepper. In a large skillet, heat butter over medium heat. Add egg mixture; cook and stir until almost set.

4. Spread sausage gravy mixture over the crust. Top with eggs and cheeses. Bake 5-10 minutes longer or until eggs are set and cheese is melted. Cut into wedges.

6-CINNAMON-SUGAR PIZZA MADE WITH CRESCENT ROLLS

I Love easy recipes like this, I have made these but I put the cinnamon mixture on the crescent wedge and roll them up and bake them then drizzle. either way, they are so so good.

Ingredients:

1/4 cup butter *make sure butter is cold*
1/4 cup sugar
1/4 cup brown sugar
1/4 tsp cinnamon
dash of salt
1/2 cup flour
1 can Pillsbury Crescent Rolls

Directions:

Preheat oven to 400 degrees F
Cut in butter to sugars, cinnamon, and salt and flour to form crumbs.
On an ungreased cookie sheet, separate crescent roll dough into 8 triangles. Sprinkle crumbs on top.
Bake at 400 degrees for 8-12 minutes.
After they were cooked and cooled I cut them into smaller triangles but you can leave them big too!
GLAZE
1/2 cup powdered sugar *I like my glaze thicker, so if the glaze is too runny, just add more powdered sugar to get yours to the desired consistency.*
1 Tbsp. softened butter
1-1/4 tsp. vanilla
1 to 1-1/2 Tbsp. milk
Blend together and drizzle over Sugar Crumb Crispies

7-HASH BROWN CRUST BREAKFAST PIZZA

This recipe remains pizza’s crustiness and hash brown’s great taste.

Ingredient

For The Crust
1 package (20 oz) Simply Potatoes Shredded Hash Browns (any variety)
2 small eggs (or 1 large egg)
1/2 cup shredded cheddar cheese

For The Topping
4-5 eggs
1 cup mozzarella or cheddar cheese
1/2 cup diced bell peppers (or sausage, bacon)
1/8 cup diced onion (optional)

Instructions

Pre-heat oven to 425° F. Line a sheet pan with parchment paper, foil or a cookie sheet. Lightly grease with oil and set aside.
In a large bowl, combine the hash browns, eggs, and cheese until completely mixed. Pour mixture onto the greased baking sheet and shape into a circle or oval. Bake for 20 minutes or until golden.
While the crust is baking, prepare the toppings. Remove crust from oven and top with cheese, eggs, and veggies. Return to bake for 12-15 minutes or until eggs are done to desired consistency. Cool for 5 minutes. Slice and serve hot.

8-Garlic White Pizza With Chicken and Ricotta

Ingredients

HOMEMADE PIZZA DOUGH ( THIS IS FOR 2 CRUSTS) OR USED STORE BOUGHT
4 1/2 c bread flour, or can use all purpose flour. I like the bread flour for crusts
1 Tbsp sugar
1 tsp salt
4 Tbsp olive oil ( i used 1 to cut down on fat)
1 pkg (1/4 ounce) quick rise yeast
2 c warm water 110 – 115 f.
PIZZA INGREDIENTS ( FOR 1 PIZZA, DOUBLE FOR TWO)
2 – 3 clove garlic, minced
2 Tbsp butter
2 Tbsp olive oil
basil, oregano, garlic powder, parsley, salt and pepper
3/4 c grated parmesan or romano cheese
2 c mozzarella or 4 cheese blend ( that’s what I used)
1 boneless, skinless chicken breast, cut into bite-sized pieces – seasoned and sauteed
1/2 c ricotta cheese, mixed with 1/2 cup grated parmesan cheese, 1 tablespoon parsley, and salt and pepper ( this is optional) but is so good.

Directions

1. For the crust: In a bowl, measure 2 cups warm water ( not hot) 110 – 115 F. Dissolve the yeast in water and add the sugar. Set aside. I use my KitchenAid mixer with a dough hook. If you don’t have, mix in a large bowl by hand. Put the flour, oil, and salt in the bowl, attach the dough hook, blend the flour, salt and oil; add the yeast water, mix until forms a ball.
2. Knead until smooth and elastic, add more flour if the dough is sticky, this should not be dry but firm until ball forms. Let rise in a large bowl covered with a wet towel.. until doubled in size in warm spot.. away from the draft.
3. In a skillet, saute seasoned chicken in olive oil till cooked through. Set aside.
4. Mix ricotta with 1/2 cup parmesan cheese, tablespoon parsley, salt, and pepper. Set aside.
5. Mince the garlic, add to the butter and oil. Microwave for about a minute; just until butter is melted and garlic starts releasing flavor. Set aside.
6. When the dough has risen. Cut in half unless halving the recipe. I make the full recipe and make 2 pizzas. Grease round pizza pan or jelly roll pan. I used both, and I add cornmeal for added crunchiness. Up to you.
7. Spread out dough with oiled fingers. With a pastry brush; evenly spread garlic butter over the crust. Next season with salt, pepper, garlic powder, parsley, basil, red pepper flakes ( optional)
8. Next parmesan cheese. Then dollops of ricotta mixture if using ( it really is good). Then layer chicken evenly. Next the mozzarella. Vegetables and more seasonings if desired. **** This picture is with chicken and cheeses and onion only.
9. Bake in a 425-degree oven for 20 – 25 minutes or until desired crispness. This picture was cheeses, onion, red bell pepper, chicken and mushrooms. Yum!
10. This pizza is wonderful without the chicken and veggies. I hope you try it, it really is a delicious change from traditional pizza.
11. Remember: Fresh dough is always best.

9-BEST EVER PIZZA CASSEROLE

This was so easy to make! I added the pepperoni in with the Hamburg, just to get off a little grease, added a whole jar of mushrooms and left out the onion (personal preference) I prepared everything the night before and then my daughter threw it in the oven for dinner.

Ingredients:

1 lb. ground beef or Italian sausage cooked and well drained(I use a little of both)

1 16 oz. box bow tie pasta

½ teaspoon salt

½ teaspoon oregano

½ teaspoon garlic powder

2 ounces sliced pepperoni

1 (26 ounces) jar pasta sauce

1 10 oz. can diced Italian style tomatoes

¼ cup grated parmesan cheese

1 (8 ounces) package shredded Italian cheese blend

Any other pizza toppings, you can add like black olives, onions, green peppers, mushrooms, etc…

How to make it :

Boil water and salt for pasta. Once it starts boiling, add pasta. Brown meat in a separate frying pan. When pasta and meat are cooked, drain.

In a lightly greased 9×13×3 inch pan, pour a small amount of sauce to lightly coat the bottom. Add a layer of pasta and add 1/2 of sauce, can of tomatoes, garlic powder, and oregano.

On top of pasta, layer the ground meat, then add a layer of pepperoni Sprinkle parmesan cheese and Italian cheese. And another layer of pepperoni. Top with bacon bits and anything else you like just like a pizza!

Bake in the oven at 350 * for 25- 30 minutes

10-Antipasti Pull-Apart Pizza

A FUN TWIST ON PIZZA, THIS APPETIZER FEATURES ALL THE FLAVORS OF AN ANTIPASTI PLATTER OVER A CRUST OF BITE-SIZE PIECES OF FRENCH BREAD.

Ingredients:

2 tsp (10 mL) olive oil, divided
2 pkg (11 oz) refrigerated French bread dough (see Cook’s Tip)
1 jar (12 oz) marinated artichoke hearts, drained and patted dry (about 1 1/4 cups/300 mL)
1 8-oz (250-g) block mozzarella cheese
1 medium red bell pepper
1/2 cup (125 mL) pitted ripe olives
2 garlic cloves, pressed
1/4 tsp (1 mL) salt
1/4 tsp (1 mL) coarsely ground black pepper
2 oz (60 g) Parmesan cheese, divided
Chopped fresh parsley (optional)

Directions:

1.Preheat oven to 400°F (200°C). Brush Large Round Stone with Handles with 1 tsp (5 mL) of the oil. Place one package of the dough onto the Large Grooved Cutting Board. Using a sawing motion, cut dough in half lengthwise with Color Coated Bread Knife; slice each dough half crosswise into 16 half moons for a total of 32 half moons. Repeat with remaining dough. Arrange dough over baking stone, leaving a 1/2-in. (1-cm) a border around the edge and spacing 1/2 in. (1 cm) apart; brush with remaining oil. Bake 14-16 minutes or until crust is golden brown.
2. Meanwhile, for antipasti, coarsely chop artichokes with Food Chopper. Dice mozzarella cheese into 1/2-in. (1-cm) cubes and dice bell pepper with Santoku Knife. Slice olives with Egg Slicer Plus®. Combine artichokes, mozzarella cheese, bell pepper, olives, garlic pressed with Garlic Press, salt and black pepper in Stainless (4-qt./4-L) Mixing Bowl; mix well.
3. Remove baking stone from oven to Stackable Cooling Rack. Using Rotary Grater, grate half of the Parmesan cheese over crust; top with antipasti. Bake 5-7 minutes or until mozzarella cheese is melted. Remove from oven; grate remaining Parmesan cheese over top and sprinkle with chopped fresh parsley if desired.
