Key Lime Pie Recipe

Ingredients:

– For the crust:
– 1 ½ cups (150g) graham cracker crumbs
– ⅓ cup (65g) granulated sugar
– 6 tablespoons (85g) unsalted butter, melted

– For the filling:
– 4 large egg yolks
– 1 can (14 oz/396g) sweetened condensed milk
– ½ cup (120ml) key lime juice (freshly squeezed is best, but bottled works too)
– 1 tablespoon key lime zest (optional, for extra flavor)

– For the topping (optional):
– Whipped cream
– Lime slices or zest for garnish

Instructions:

1. Preheat the oven to 350°F (175°C).

2. Make the crust:
– In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined.
– Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish.
– Bake the crust for 8-10 minutes, then remove and let it cool slightly.

3. Prepare the filling:
– In a large bowl, whisk the egg yolks until smooth.
– Add the sweetened condensed milk and whisk until fully combined.
– Gradually mix in the key lime juice and zest (if using) until the filling is smooth and slightly thickened.

4. Assemble the pie:
– Pour the filling into the pre-baked crust and spread it evenly.
– Bake for 15-18 minutes, or until the filling is set but still slightly jiggly in the center.

5. Cool and chill:
– Let the pie cool to room temperature, then refrigerate for at least 4 hours (or overnight) to set completely.

6. Serve:
– Top with whipped cream and garnish with lime slices or zest if desired.
– Slice and enjoy!

Tips:

– Use key limes for the most authentic flavor, but regular limes work too.
– Avoid overbaking the filling to keep it creamy and smooth.
– For a no-bake version, skip baking the filling and just chill the pie until set.
