Step-by-Step Dough

  1. Activate: Dissolve yeast & 1 Tbsp sugar in warm water; wait 10 min until foamy.

  3. Enrich: Mix mashed potatoes, sugar, salt, melted butter, and eggs. Add to sponge.
  4. Final Dough: Knead in remaining 6 cups flour until smooth and elastic (8–10 min).
  5. First Rise: Cover; rise until doubled (1 hour).
  6. Divide: Punch down and divide into 4–6 portions for different fillings.

Classic Cinnamon-Sugar Filling

  • ¼ cup brown sugar
  • 1 Tbsp cinnamon
  • Pinch nutmeg (opt.)
  • 2 Tbsp melted butter

Instructions

  1. Activate yeast in warm water + sugar.
  2. Make sponge with 4 cups flour; rise 30 min.
  3. Mix in potato, sugar, salt, butter, eggs, remaining flour; knead smooth.
  4. Rise 1 hour, divide, roll, fill, cut.
  5. Let rise until doubled. Bake 350 °F 15–35 min until golden.
