Apple Cinnamon Scones

TOP Reviews:

We loved your scones, what with the cinnamon & apple combo! One change I made was to use a nicely rounded measure of the apples, but other than that . . . Especially nice, slightly cooled, but then I find that is usually the case with scones! The last half of the batch was nicely served up with a thin spread of apple butter! Mmmm, yummylicious scones!!! 🙂
I made these for breakkie today and everyone raved about them! They are sweet and fruity with a lovely cinnamon touch.
I wouldnt change the amounts of sugar used or make an additional glaze as I feel that would be way too sweet. I like them as is.
I only needed 1/3 cup of milk, but that might have been due to my using spelt flour.
These tasty treats baked up in 18 minutes in a 400°F oven and were just super tasty!
I ended up with 15 scones of 2.5 inches in diameter.

Wow! These came out great… fluffy and not-too-sweet. HEADS UP–I needed to add about 1/4 cup less milk, or more flour, to given them a real scone-ish consistency. So quick and easy. I would recommend putting some spice into the batter, though, to liven them up… a cinnamon/ nutmeg/allspice combo worked great for me!

These scones are wonderful. I added cinnamon to the dough as many of you have. Instead of apples I used peaches and it turned out just delicious. I will definitely make these again.

Ingredients

SCONES
1 large egg
¼ cup unsweetened apple sauce
1 tsp lemon juice
1 Tbsp sugar
1 medium apple
2 cups all-purpose flour (plus a small amount for dusting)
½ tsp salt
2 tsp baking powder
1 tsp cinnamon
½ tsp ground ginger
5 Tbsp cold butter
CINNAMON GLAZE (optional)
½ cup powdered sugar
½ tsp cinnamon
2 tsp water

Instructions

Preheat the oven to 400 degrees. Wash the apple, cut it into quarters, then cut off the core from each piece. Use a box grater or large holed cheese grater to shred the apple.
In a medium bowl, whisk together the egg, apple sauce, lemon juice, sugar, and shredded apple.
In a separate large bowl, stir together the flour, salt, baking powder, cinnamon, and ginger. Once combined, add the butter and work it into the flour until it resembles coarse, damp sand.
Finally, pour the bowl containing the apple egg mixture into the large bowl with the flour and butter. Stir just until a dough forms and no more dry flour remains on the bottom of the bowl.
Turn the dough out onto a lightly floured surface and shape into a 6-8 inch wide, 1.5 inch thick disc (sprinkle more flour on your hands and on the surface of the dough if needed. The dough may be slightly sticky). Cut the disc into eight wedges.
Line a baking sheet with parchment paper and place the cut scones on top. Bake the scones for 18-20 minutes in the fully preheated oven, or until they are just slightly golden brown on top. Allow the scones to cool completely.
To make the glaze, stir together the powdered sugar, cinnamon, and water until a thick paste forms. Once the scones are fully cooled, drizzle the glaze over top.
