Baked Cheese & Broccoli Patties

These were great and easy. Next time, I would try chopping the broccoli a little bit – not in really small pieces, just smaller chunks. And, it would be totally ok to use fresh, cooked broccoli (I used frozen). I would also want to try low-fat cheddar next time.

I made a smaller version of this recipe (6 cups broccoli 2 Tbsp. Butter 1 Tbsp. Flour half an onion 2 cups cheese 1 cup of 1% milk 1 egg) and it came out wonderfully. We served it at a dinner for four and still had almost half of it left over.

Just made this and followed the recipe exactly except that I used sharp chedder cheese and added bread crumbs to the top the last few minutes of baking I just gave it a taste test after coming out of the oven and it was great! My husband better get home from work quick before I eat it all!! Thanks for the recipe.

I’m living outside the US and far from lots of the canned products used in many Thanksgiving recipes. This recipe is creamy cheesy and easy to make. I found it to be a great substitute for the cream of mushroom broccoli casserole my mom makes. I added sauteed mushrooms to my dish and some garlic to boost the flavors. Next time I made include a bit of chicken stock too.

Totally delicious – crispy yet tender (and pretty healthy, too!) Used fresh broccoli, just microwaved it for 5 minutes first. Chopped coarsely, then proceeded as directed.
Broccoli is our favorite veggie, always looking for other ways to cook and serve it. These look so good and can’t wait to give the recipe a try.

was very tasty, although we dipped ours in sweet thai chillie sauce. not sure why, but i prepared oven tray as suggested, however the fritters stuck terribly to the foil. id make these again but not bother with foil, just sprayed baking paper.

I first made this dish last year for Christmas dinner and it became an instant hit with family. This year for Thanksgiving I put it into a smaller but deeper container to save space in the oven with the other dishes. DON’T DO IT – it was a little runny on the bottom. The flavor was still very good but for me texture is also very important in food and I feel it baked better in a shallower (9 x 13) pan than the deeper one I used this weekend.

Very good if you like swiss. I steamed the broc. in the microwave…worked out fine Scaled the recipe down to serve 4 and followed the recipe exactly. Very yummy!

The flavor was delicious especially with the swiss cheese. I used frozen flowerets to make it easier and everyone loved it. I will make this recipe again.

Ingredients:

2 teaspoons vegetable oil
2 cloves garlic, minced
1/2 onion, chopped
1 (12-ounce) bag frozen broccoli, defrosted
3/4 cup panko breadcrumbs
1/2 cup sharp cheddar cheese
1/3 cup parmesan cheese
2 eggs, beaten
Salt and pepper to taste

Directions:

Preheat the oven to 400°F. Lightly grease a baking sheet lined with aluminum foil. Heat the oil in a small pan over medium heat, add in the garlic and onions. Season with salt and pepper to taste. Sauté until onions are garlic are tender, set aside to cool. Add the broccoli to a kitchen towel. Wrap the towel around the broccoli and squeeze out the extra moisture. (That step is not as important when you use fresh broccoli, its just a way of getting all the extra moisture out of frozen broccoli, you don’t want it to be real wet) Place the drained broccoli into a large bowl, add the onion and garlic and mix gently. To the same bowl, add the panko, the cheeses, eggs, and salt and pepper to taste. Mix together and form into patties, place on the prepared baking sheet. Bake in the preheated oven for 15 minutes. Flip and bake for another 15 minutes or until browned and crispy.
