For the Blondie Crust:
Preheat your oven to 350 degrees and prepare an 8×8 baking tray with a nonstick coating of your choice.
In a bowl, combine the melted butter and light brown sugar, mixing them thoroughly. Then, whisk together the egg yolk, all-purpose flour, salt, mashed banana, and pure vanilla extract until you have a well-blended mixture.
Pour the blondie mixture into the prepared baking tray and bake for 15-20 minutes, or until it’s set.
Allow the blondie crust to cool down to room temperature as you prepare the cheesecake filling.
For the Cheesecake Sauce:
Using a hand mixer, whip the heavy cream in a medium bowl until stiff peaks form. Refrigerate it to stiffen further.
