  1. Preheat oven to 400°F and line two rimmed baking sheets with parchment paper.
  2. Roll each sheet of puff pastry into a 12×15-inch rectangle and transfer each sheet to prepared baking
    sheets.
  3. In a small bowl, whisk together the cream cheese and mustard until smooth.
  4. Season to taste with salt and pepper.
  5. Spread the cream cheese mixture over half of each puff pastry sheet, leaving a 1/2-inch border around the edge.
  6. Place 1/2 of the beef and 1/2 of the cheese over cream cheese on each puff pastry sheet.
  7. Sprinkle thyme evenly over the top of each.
  8. Fold uncoated half of puff pastry over the filling.
  9. Crimp edges together with a fork.
  10. Whisk together the egg and 1 tablespoon water.
  11. Brush puff pastry with egg wash and cut a few slits in puff pastry.
  12. Bake until golden brown, about 25 minutes. Slice, serve.
