I was looking for something different to do with pizza dough and found this little gem of a recipe. Super yummy and easy! It was also nice to have a new breakfast recipe to try. Not everyone in the fam likes spinach, so I made some plain ones with just cheese, egg and crumbled bacon. I added mushrooms and sweet bell pepper to mine along with the spinach…everyone was happy! This is keeper and not just for breakfast!
Ingredients for 3-4 people (side dish, as part of breakfast, lunch or brunch):
4 slices of puff pastry (or part of a puff pastry roll) thawed
3 eggs
5 slices of Turkey bacon
3 slices of mature cheese (or grated cheese)
handful of cherry tomatoes
Italian spices
pepper and salt
Preparation:
Preheat the oven to 180 ºC and cover a baking sheet with baking paper.
Stick the puff pastry slices together to create a large square. Fold the edges of the puff pastry so that it is slightly raised. Place 4 slices of Turkey bacon on the puff pastry. Tear the cheese into pieces and divide this over and around the bacon. Break the eggs above the puff pastry one by one. Season the breakfast pizza with salt and pepper. Halve the tomatoes and divide this over the breakfast pizza. Finally, divide the last slice of bacon, a little cheese and Italian herbs on the pizza.
Heat the breakfast pizza in the oven for 20 minutes until the puff pastry is cooked and the eggs are solidified.
