These brownie cookie sandwiches are rich and fudgy and stuffed with swirls of light and fluffy cookie dough buttercream. Betcha can’t have just one!
But this….this is worth every second of effort. It is crazy indulgent and ridiculously scrumptious. The brownie cookie is just like a brownie in both texture and taste. The surface of the cookie has the familiar thin crinkly layer.
On the brownie scale of super dense and fudgey through to cakey, this cookie lies somewhere in between. The inside is soft and moist and every so slightly chewy. And it’s really, really chocolatey
These cookies are so good. Eat them fresh while the frosting is nice and soft or pop them in your refrigerator to pop out and eat cold (my favorite way to eat them!). These cookies are so soft and chewy that even when cold, you can bite right into what tastes like brownie batter with a hint of Salted Caramel Buttercream.

230 gr dark chocolate
110 gr melted butter
2 eggs
150 gr brown sugar

Ingredients for Brownie Cookies (Brookies):
230 gr dark chocolate
110 gr melted butter
2 eggs
150 gr brown sugar
1 tbsp honey
1 tsp vanilla extract
100 gr self raising flour
20 gr cocoa powder
1 tsp baking powder
1 tsp baking soda
In a bowl add the chocolate with the melted butter and whisk until the chocolate melts completely. Use a bain marie or microwave to melt the chocolate if the butter is not too hot to melt the chocolate. Set aside to cool a little bit. In a large bowl add the brown sugar, the eggs, honey and vanilla extract and beat with a mixer for 5 minutes. Add the melted chocolate and mix with a spatula. Sift the flour, cocoa powder, baking powder and baking soda and add them into the mixture. Mix well with a spatula so the ingredients are well combined. Cover with plastic wrap and refridgerate for 2-3 hours. Use a measurement cup to make equal size cookies. Place them into a baking pan lined with parchment paper. Leave space between the cookies because they are going to spread while baking. Bake them in a preheated oven at 180 C for 12 minutes. Let them cool completely.
Ingredients for Salted Caramel Buttercream:
250 gr butter at room temperature
200 gr sweetened condensed milk
125 gr caramel
1 tsp salt
In a large bowl add all the ingredients together and mix for 2 minutes. If the buttercream is very soft, place it in the fridge for 1-2 hours to harden. Fill the half Brookies with buttercream and cover them with the other halves to create sandwiches. Your Brownie Cookie Sandwiches with Salted Caramel Buttercream are ready!!! Enjoy!
