Cheesy Pineapple Casserole

This sweet southern pineapple casserole could be a side dish…or a dessert! This unique recipe with pineapple, cheddar cheese, and butter crackers is always a hit.

The first strange thing about this recipe is that it calls for shredded cheddar cheese. I have no idea why this works but it totally does. I recommend shredding a block of sharp cheddar cheese yourself. This will allow the cheese to melt smoothly and give you the best texture.

The first time my grandma made this recipe for a family picnic I thought she was crazy. Pineapple, cheese…and crackers? I didn’t know whether to be grossed out or intrigued.

PREPARATION

  1. Preheat oven to 350º F and grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large bowl, whisk together cheese, sugar, and flour, mixing until the cheese is totally coated.
  3. Stir in pineapple chunks and crushed pineapple, then mix in ground cinnamon, if using.
  4. Pour pineapple mixture into a greased baking dish.
  5. In a medium bowl, mix crushed Ritz crackers with melted butter, then sprinkle mixture over a baking dish in an even layer.
  6. Place baking dish in oven and bake for 30 minutes, or until crackers are golden and crispy.
  7. Remove from oven and serve hot.
