Directions:

Begin by preparing the zucchini. Grate the zucchini and place it in a medium-sized bowl.

Add the beaten eggs, all-purpose flour, grated Parmesan cheese, shredded mozzarella cheese, chopped onion, and a pinch of salt to the bowl with the grated zucchini. Stir the mixture thoroughly until all the ingredients are well combined.

In a skillet, heat 2 tablespoons of vegetable oil over medium-high heat until it’s hot and shimmering.

To form the patties, scoop out tablespoonfuls of the zucchini mixture and carefully place them into the hot oil. You may need to work in batches to avoid overcrowding the skillet.
