Coconut Banana Bread

Adapted from: barefeetinthekitchen.com

Adding coconut to this all time classic is a way to change-up the flavor, in a very tasty way. Coconut Banana Bread is a yummy snack, and goes great with your morning (or afternoon) tea or coffee.

Banana and coconut are a natural combination and this quick bread is a great way to enjoy them. Like most banana breads, it’s easy to throw together: you can whip up the batter in twenty minutes, and then just let the oven do its work. Enjoy warm out of the oven or toasted for breakfast the next day.

Our favorite type of bread is banana bread. I know it seems so basic and boring but it’s classic and I have always loved the banana bread smell drifting through the house when we were younger. My mom would make banana bread often because not only was it our favorite, it was also my dad’s favorite.

Pour the batter into the prepared loaf pan. Sprinkle with remaining coconut. Bake for 55-70 minutes until golden brown and a toothpick inserted comes out clean. Cool in the pan for 10 minutes before removing from the pan. Let cool completely on a wire rack before slicing. Enjoy!
