Bobby Flay is world know celebrity chef and you see all his creative dishes on the food network. I loved how he wrote a healthy cookbook and how he dedicated it to his daughter and most importantly his love for food. It goes to show you don’t have to go on these fad diets just to be healthy. Just eat real food and get creative with flavors and textures and live a fit lifestyle.
A little pricey at $32.50, but Bobby Flay Fit: 200 Recipes for a Healthy Lifestyle has a large number of recipes that we’ll be using at our house, esp. those for breakfasts and healthful snacks. The book likewise contains some intriguing sides that I’m eager to give a try, including roasted radishes and roasted carrots with Spanish spices and harissa yogurt sauce. All told, I’ve tabbed about 30 items for investigation. First up: spicy black bean-lime hummus!

Very easy to make and tasty! I use a teaspoon to measure out mixture for 1 inch balls and works great! Have to let sit 6 hours or even better overnight.

Ingredients:

1 package (8 ounces) cream cheese, softened.
1 can (8 ounces) crushed pineapple, well drained.
1 cup chopped pecans
3 cups flaked coconut.

Instructions:

In a small bowl, beat cream cheese and pineapple until combined then fold in the pecans. Cover and refrigerate for 1 hour.

Take out of refrigerator and roll into 1-inch balls; then roll the balls in the coconut. Refrigerate for 4 hours or overnight.
