Cracker Barrel Meatloaf

Love that you shared this! It’s the recipe I created in the late 60’s but I use a package of Onion Soup Mix and no cheese. In case anyone wants to try. I also make great gravy by simmering beef base, water, onion pieces, a whole garlic clove, a squeeze of tomato or a piece of fresh tomato. Strain the fat off the meatloaf and add to broth mixture. Thicken. Yummy Meatloaf gravy! Seems strange to some but my daughter requests this every Birthday. I will try with the cheese……but not for her Birthday 😊
For BETTER than Cracker Barrel meatloaf, substitute half of your ground beef with ground pork, or double your recipe with a pound of beef, a pound of pork, and double everything else. Leftover meatloaf makes awesome sandwiches!

This meatloaf made me drool just smelling it cook from across the hall. I’m not the biggest fan of beef, so I was surprised by how hungry this meatloaf made me!
The idea of using hashbrowns as a binder instead of breadcrumbs or oats is new to me and sounds really intriguing. I’d like to try making up this style of meatloaf the next time I decide to make one. The other ingredients are pretty standard to the way I normally make meatloaf, though I also don’t care very much for ketchup as a sauce. There’s an interesting sauce given with an Amish meatloaf recipe that uses ketchup, mustard and brown sugar that looks more promising.

2/3 cup milk

Interesting! I never would have thought of using hashbrowns as a binder in my meatloaf. I have never been a fan of putting ketchup on meatloaf before baking. That wouldn’t really be a copy cat anymore though. Might have to try it with and without and decide.

Now I have tried meatloaf just about every which way but not with hash browns. Sounds reasonable though so will be making it this week for sure. I have put ketchup both in and on top but not have not used diced tomatoes. Maybe that is why I love Cracker Barrels meatloaf.

Ingredients :

2 eggs
2/3 cup milk
32 Ritz crackers, crushed
1/2 cup chopped onion
4 ounces shredded sharp cheddar cheese
1 teaspoon salt
1/4 teaspoon pepper
1 1/2 lbs ground beef
1/2 cup ketchup
1/2 cup brown sugar
1 teaspoon mustard

Directions :

Preheat oven to 350.
Beat eggs. Add milk and crackers. Stir in onion and cheese. Add ground beef. Mix well. Shape into a loaf.
Bake at 350 for 45 minutes.
Combine ketchup, brown sugar and mustard to make topping. Spoon half of the topping over the meatloaf after 30 mins of baking. Return loaf to oven for 10 more mins of baking. Spoon the rest of the topping over meatloaf.
