Cream Cheese Pickles

I love that these are low carb and so easy to make. A few people were skeptical about trying them, but they finally tried them and they loved them. Now they request the pickle things.

I’ve made this exact recipe (with a couple of modifications) for years and we’ve always loved them & they’re always a huge hit!!! I’ve always made them using Granulated Garlic and Onion Powders and S/P. The Ranch Dressing Mix would actually make it much easier….so I like that part of your version better.However, a KEY STEP in what I do is, that I lay out the Ham and Pickles on paper towel the night before to try and wick out some of their moisture…thus, not making the Ham & Pickle Wrap too wet once assembled. I’ve forgotten to do this and I find it to make a big difference. Good luck and happy eating…they’re AWESOME!!!!

8 kosher dill pickles, patted dry
2 (8 ounce) packages cream cheese, softened

These are crazy good. I now have to bring them to our meet up groups and family gatherings constantly. It is amazing that something so simple is so good. Need to make sure that you dry the pickles and the ham before rolling them up. Love these!!!!!!!!!!!!!!!!!!

One of my roommates introduced me to this recipe awhile back and now all of our friends make it. We use sliced ham instead of beef and it is easier if you spread the cream cheese on the meat instead of the pickle. Everytime I bring this to a party, they are usually gone in seconds.

I’ve been making these for years and they are always well received. I use the dried beef (rinsed and dried), spread the cream cheese on the beef and wrap big Claussen dills. I then refrigerate them so the cheese sets up and then slice them into 3/4″ slices. I keep the ends for “family eats” and serve the rest.

Ingredients:

8 kosher dill pickles, patted dry

2 (8 ounce) packages cream cheese, softened

2 1/2 ounces thin-sliced beef luncheon meat.

 

Directions:

Spread or pat cream cheese around each pickle. Wrap 2 sheets of meat around each pickle. Refrigerate pickles overnight, slice before serving.
