Doritos Casserole

Nothing is like a Dorito. I don’t care who you are or where you’re from, that cheesy goodness that is a classic Doritos chip is unmatched by all others. That’s why when I saw this recipe I had to have it, and have it NOW!

I started cooking literally the minute I had found this – and boy, am I glad I did it. This turned out one of the tastiest recipes I’ve tried in a while! I knew before even reading the recipe it’d be a favorite in the house, and a very exciting dinner for my 10 and 11-year-old.

Of course we had a great argument about why I should use Cool Ranch flavor next time. Since I was in a good mood I took that request! And since the recipe was such a hit, I know it won’t be long until I make this again.

Check out what my friends at Spend with Pennies had to say about this Doritos Casserole:

I love Doritos! This recipe is going to be one of my favorites. I am actually going to make it for a family get together this memorial day! I can’t wait to see how much everyone loves it.

Love this quick and easy casserole for busy nights! It’s definitely one the whole family loves. Who doesn’t like Doritos?!

Ingredients

1 (family size) bag Doritos, any flavor (I used Nacho Cheese)
1 onion, diced
1 pound lean ground beef
1 clove garlic, minced
1 package McCormick low sodium taco seasoning
1 cup Old El Paso salsa
1 cup Daisy sour cream
1 can Campbells cream of chicken or mushroom soup
2 cups Kraft shredded cheese, (I used tex mex blend)
Optional toppings
Lettuce
Tomato
Olives
Sour Cream

Instructions:

Preheat oven to 350 degrees. Place salsa in a strainer to drain while you prepare the beef.
Cook ground beef with onion and garlic until no pink remains. Add taco seasoning and ½ cup of water. Stir until thickened, then remove from heat.
Combine drained salsa, sour cream, soup and 1 cup of cheese in a bowl. Add in beef and stir well.
Slightly crush Doritos, but not into small crumbs. Layer 1&1/2 cups Doritos in the bottom of a casserole dish. Top with ½ of the beef mixture. Repeat layers. Top with an additional 1 to 1½ cups Doritos and remaining cheese.
Spray a piece of foil with cooking spray and cover casserole. Bake 30 minutes covered, remove foil and bake uncovered for an additional 20 minutes or until hot and bubbly.
