Easy Ground Beef Ramen Skillet Recipe

Ingredients:

4 tablespoons olive oil
1/2 large white onion, thinly sliced
3 cloves garlic, minced
1-inch piece of ginger, grated
1 lb lean ground beef
1 red bell pepper, thinly sliced
2 cups broccoli florets, diced
3/4 cup carrots, matchstick-cut
3 packages instant ramen noodles (discard seasoning packets)

Sauce:

2 teaspoons cornstarch
3 tablespoons light soy sauce
1/3 cup chicken broth
2 teaspoons toasted sesame oil
1 tablespoon light brown sugar
1 tablespoon rice vinegar
2 tablespoons hoisin sauce
2 teaspoons Sriracha sauce (adjust to taste)
1/4 teaspoon black pepper

Garnish:

Minced green onion
Sesame seeds

Instructions:

1. Prepare the Sauce

  • In a small bowl, combine the sauce ingredients: cornstarch, soy sauce, chicken broth, sesame oil, rice vinegar, hoisin sauce, Sriracha, and black pepper. Set the sauce aside.

2. Sauté the Aromatics

  • Heat 2 tablespoons of oil in a large skillet or wok over medium-high heat.
  • Once the oil is hot, add the sliced onion and cook until it turns soft, which usually takes about 4-5 minutes.
  • Reduce the heat to medium, then stir in the grated ginger and minced garlic. Sauté briefly for 15 seconds before pushing them to the side of the skillet.

3. Brown the Beef

  • Increase the heat to high and introduce the ground beef to the pan. Allow it to sit undisturbed for 30 seconds, then use a wooden spoon or spatula to break apart the meat. Continue cooking until the beef is no longer pink.

4. Prepare the Noodles

  • While the beef is cooking, bring a large pot of water to a boil. Add the ramen noodles and cook them for 1.5 minutes less than the package directions suggest. Drain the noodles and toss them with 1 tablespoon of oil. Set them aside.

5. Stir-Fry the Vegetables

  • Reduce the heat of the skillet to medium-high, and add the thinly sliced bell pepper, diced broccoli, and matchstick-cut carrots. Cook the vegetables until they become crisp-tender, stirring occasionally, which should take about 3-4 minutes.

6. Combine and Finish

  • Stir the sauce once more, then add it to the skillet along with the cooked ramen noodles.
  • Use tongs to cook and toss everything together until the sauce thickens and coats all the ingredients, usually 2-4 minutes.
