Homemade Ground Beef Stroganoff and Fried Corn Fritters Dinner Recipe

Stroganoff is a classic Russian dish made with sautéed pieces of beef in a sour cream sauce, usually served over a bed of egg noodles. The addition of ground beef makes this version of stroganoff a hearty and budget-friendly option for a comforting weeknight dinner. And what better way to complement this dish than with crispy and fluffy fried corn fritters?

Ingredients:

For the Stroganoff:

1 lb ground beef
1 onion, diced
2 cloves garlic, minced
1 cup mushrooms, sliced
2 tbsp all-purpose flour
1 tsp paprika
1 tsp dried thyme
2 cups beef broth
1 cup sour cream
Salt and pepper to taste
Egg noodles, cooked according to package instructions

For the Fried Corn Fritters:

1 cup corn kernels (fresh or frozen)
1/2 cup all-purpose flour
1 tsp baking powder
1 egg
1/4 cup milk
Salt and pepper to taste
Vegetable oil for frying

Instructions:

In a large pan, cook the ground beef over medium-high heat until browned, breaking it up into small pieces as it cooks.

Add the diced onion, minced garlic, and sliced mushrooms to the pan. Sauté until the vegetables are soft and fragrant, about 5 minutes.

Sprinkle the flour, paprika, and dried thyme over the beef and vegetables. Stir to combine and cook for 2-3 minutes until the flour is slightly browned.

Gradually pour in the beef broth, stirring continuously, until the sauce has thickened.

Remove the pan from heat and stir in the sour cream. Season with salt and pepper to taste.

Serve the stroganoff over a bed of cooked egg noodles.

To make the fried corn fritters, combine the corn kernels, flour, baking powder, egg, milk, salt, and pepper in a bowl. Mix until just combined.

In a large pan, heat the vegetable oil over medium-high heat. Using a spoon or cookie scoop, drop 1-2 tbsp of the batter into the pan.

Fry the fritters until they are golden brown on both sides, about 2-3 minutes per side.

Drain the fritters on paper towels to remove excess oil. Serve hot as a delicious side dish to the stroganoff.

Enjoy your hearty and satisfying dinner of homemade ground beef stroganoff and fried corn fritters! This meal is perfect for cold nights and is sure to warm you up from the inside out. The creamy sauce and tender beef in the stroganoff, paired with the crispy and sweet corn fritters, make for a well-rounded and delicious dinner.
