Ingredients for Meatball Subs:

1 pound ground beef
2 large eggs
1 cup bread crumbs
1/4 cup parsley, chopped
3 cloves garlic, minced
Salt and pepper, to taste
2 tablespoons olive oil
8 soft sub rolls
1/2 cup unsalted butter, melted
8 slices mozzarella cheese
1 cup marinara sauce
Parmesan cheese, grated (optional)

Instructions for Making Meatball Subs:

In a large bowl, mix together the ground beef, eggs, bread crumbs, 1/4 cup parsley, 3 cloves garlic, salt, and pepper. Shape the mixture into golf ball-size meatballs.

Heat a cast iron pan or skillet with 2 tablespoons of olive oil over medium-high heat. Cook the meatballs until they are browned on all sides, about 10-15 minutes. Once fully cooked, remove the pan from heat and transfer the meatballs to a plate.

Preheat your oven to 350 degrees F (180 degrees C). Place the sub rolls in a baking sheet and cut the top of the rolls with a knife. Press the inside of the rolls down to create a “boat” shape.

In a small bowl, mix together the melted butter, 3 minced garlic cloves, and 2 tablespoons of parsley. Brush the rolls with the garlic butter mixture. Bake the rolls in the oven for 5 minutes or until toasted.

Place two slices of mozzarella cheese in each of the rolls. Spoon a generous amount of marinara sauce on top of the cheese. Place three meatballs in each roll, and add more marinara sauce on top.

Bake the meatball subs in the oven for 25 minutes or until the cheese is melted and gooey. If desired, top the subs with grated Parmesan cheese.
