Cathie, they are regular graham crackers, they just swell with the moisture from the cream cheese/pudding/cool whip mixture. Hope that helps. 🙂
It doesn’t look like graham crackers like the recipe says. Looks more like ladyfingers Either way looks very good.
This cake looks amazing!! Can’t wait to make it! What kind of graham crackers did you use? Your picture doesn’t look like the typical graham cracker, such as Nabisco.\\
Delicious! Nice flavor, chef John’s recipes never let me down 🙂 light and delicious. I used real vanilla extract not sure if imitation would of worked. Also used regular Philadelphia cream cheese as I couldn’t find any mascarpone… Came Out wonderful!
I cut recipe in half and used store bought graham pie crust. …decorated in circle with strawberries the center circle with blueberries. I used 1/4 cp of sugar in with cream cheese then 1/3 cp powdered sugar in whipped cream….delicious. …omitted lemon completely. I made original recipe 1st…not sweet enough and lemon didn’t taste right in this recipe.
I made this for a 4th of July family BBQ. Everyone loved it. I needed more servings so made in a 9×13 dish changing servings from 12 to 15. I used chocolate graham crackers and didn’t add sugar. It turned out great! Thanks for the recipe.
Ingredients:
19 oz graham crackers

DB LOVED it! I thought it was good and appreciated it wasn’t to sweet, a cooling & refreshing dessert for the 4th. The only thing I did different was to leave out the cocoa powder.
I feel like I say this whenever you share an icebox cake but I have never made one myself! Crazy right?? This sounds delicious with all the berries! Hope you had a great weekend Kelly!
I liked this a lot, and it was easy, and a big hit. I gave it four stars because I feel like the lemon flavor from the juice didn’t belong. I’ll make it again, but without the lemon juice.

Ingredients:
19 oz graham crackers
8 oz cream cheese, softened
2 (3.4 oz) packages Vanilla Instant Pudding
2-1/2 cups cold milk
12 oz Cool Whip (or homemade whipped cream)
3 cups fresh strawberries, sliced
1-1/2 cups fresh blueberries
2 oz white chocolate chips
Instructions:
Beat cream cheese and dry pudding mixes in large bowl with mixer until blended.
Gradually beat in milk.
Gently stir in Cool Whip or homemade whipped cream, reserving ½ cup.
Spread a thin layer of cool whip in a 9Ă—13 pan just to coat the bottom.
Layer 5 graham crackers across the center of the pan, then 2 more, breaking them as needed to fit around the top and bottom edges.
Spread a layer of pudding mixture over graham and top with a layer of blueberries and sliced strawberries.
Place graham crackers on top of berries, then pudding mixture, then layer of berries again.
Repeat the graham-pudding-berries layers 1 more time (3 times total) and you should reach the top of the pan.
Refrigerate for at least 4 hours or overnight until the graham crackers have softened completely.
When ready to serve, melt white chocolate chips in a bowl as directed on package and drizzle over dessert.
You can use a spoon to drizzle it over the tops of the berries or you can put it into a small zip-top bag and snip of the corner for an easy “piping bag.”
