This is the easiest meatloaf ever. It taste just like mom’s growing up. Moist and perfect ingredients. I always double everything so the 4 of us can have leftovers the next day.

Best meat loaf ever. Family loves it. Usually double the recipe but use 3lbs of ground beef instead of 2. Also, I make extra sauce for the table besides what goes on top. This recipe is better that the one on Foodnetwork, which doesn’t drain the can tomatoes and has 1/2 the oats.

Have made this for my family a couple of times. It is absolutely the best meatloaf. I Double it using one pund of 97% lean ground Chuck and one pond of 97% lean ground turkey. Form it into a ring and put a half of pealed, center scored, onion in the middle. Top with the special sauce. Bake for one hour, rest for 10-15 minutes, slice and serve

I’ve made this recipe for years, with just a few modifications for our personal tastes. We actually prefer dried onion flakes to fresh onion in this (I know- fresh is better, but just for this, we like the dried better.) I also leave out the green peppers, because my sister doesn’t like them. To make up for that, I sub diced tomatoes with green chiles for the regular diced tomatoes. In our opinion, the topping is what makes this recipe. My sister insists that I make extra “gravy,” as she calls it, to pour over her portion on her plate

INGREDIENTS

1 pound lean ground beef
1¼ teaspoons salt
¼ teaspoon ground black pepper
½ cup chopped onion
½ cup chopped bell pepper
1 large egg
1 cup diced canned tomatoes with their juice
½ cup quick cooking oats
Topping Ingredients
⅓ cup ketchup
2 tablespoons brown sugar
1 tablespoon yellow mustard

INSTRUCTIONS

Place a rack in the center of the oven and preheat the oven to 375 F.
In a large bowl mix together all meatloaf ingredients well. Place the mixture into a 9×13-inch glass or ceramic baking dish and shape into a loaf.
Mix together the topping ingredients and spread over the loaf.
Bake until done, about 1 hour. Remove from the oven and let rest for 10 minutes before slicing.
