Island Pecan Pie
Ingredients:
- 1 pie crust (store-bought or homemade)
- 1 3/4 cups sugar
- 1 cup chopped pecans
- 1 cup crushed pineapple (drained)
- 1 cup grated coconut
- 1/2 cup melted unsalted butter (1 stick)
- 5 eggs (room temperature)
- 1 tbsp cornstarch
- 1 tbsp flour
- 1/4 tsp salt
Instructions:
- Preheat oven to 300°F.
- In a large bowl, mix sugar, eggs, cornstarch, flour, and salt until well blended.
- Add melted butter, then gently mix in pecans, pineapple, and coconut.
- Pour the mixture into the pie crust and press the edges.
- Bake for 55 minutes, cover with foil, then bake for an additional 15-20 minutes until firm.
- Cool, then decorate with whipped cream and toasted coconut. Enjoy!
