Quick Asparagus Stir-Fry

One of my favorite quick recipes for green asparagus, stir-fried with garlic and olive oil. A squeeze of fresh lemon juice brightens the asparagus up at the end.

Surprised how much better than roasted! Used red pepper flakes instead of serrano but otherwise followed recipe, crisp and tasty in less than 2 minutes. Excellent.

Love the flavor and crispness of the result, much better than steamed (often mushy) asparagus. Just one quibble: so often a recipe takes longer to prepare than the time indicated. This time the opposite. Not sure how it could possibly take 15 minutes to cook — more like 3.

quick and easy, will definitely be making again! I usually roast asparagus in the oven but this is a great way if you don’ t have much time.

Ingredients

2 tablespoons olive oil
1 clove garlic, minced
1 pound asparagus, trimmed and cut into 1 1/2-inch diagonal pieces
salt
1 squeeze lemon juice, or to taste

Directions

Heat olive oil in a large skillet over medium heat; cook and stir garlic until fragrant, about 30 seconds. Add asparagus and stir-fry until soft but still firm, 5 to 7 minutes. Season with salt and lemon juice.
