Sweet Amish Macaroni Salad

A colorful and flavorful macaroni salad made with hard cooked eggs, bell pepper and celery in a creamy dressing. Best macaroni salad I have ever had. I always get many requests for recipe. Enjoy!

Excellent! I used 1/3 c. sugar & substituted finely chopped carrots instead of pepper. I also used mayo instead of Miracle Whip. A trick for a creamy dressing: seperate the egg yolk from the hard-boiled egg & blend with the mustard until smooth. I recommend French’s Sweet & Tangy mustard.

I made this for a picnic yesterday, and everbody loved it! It was sooo good! I took advice from other reviewers and only put 1/2 of the sugar in it, as it was sweet enough with just that ! This one’s a keeper. Thanks Connie!

Wonderful salad, different than most macaroni salads. It looks as good as it taste. Only one thing you should know, is this salad is rather sweet. You might want to cut back on the sugar.

This really is good, didn’t know if I should try the sugar and vinager but followed the recipe as is, and it was great.. I am makeing it again the Memorial weeking and taking it to pass around at a picnic. Thank you so much for shareing. Oh and I also cut way back on the sugar.

Tangy dressing that was delicious. The adults had seconds and thirds. I had to make a no onion batch for the little kids. Overall a big hit and still good the next day.

1 lb salad macaroni
4 hard-boiled eggs (chopped)

Ingredients:

1 lb salad macaroni
4 hard-boiled eggs (chopped)
1 small onion, finely diced
3 celery ribs, diced small
1 small sweet pepper, seeded and diced small (red or orange)
Dressing
2 cups light mayonnaise (do not use Miracle Whip)
1/2 cup sugar
1/8 cup yellow mustard
2 tablespoons dill pickle relish
1 tablespoon white vinegar or 1 tablespoon apple cider vinegar
3/4 teaspoon celery seed
1/4 teaspoon salt
paprika (to garnish)

Instructions:

Cook the macaroni according to directions, drain well.
While pasta is cooking mix up all the dressing ingredients till well blended and set aside.
Chop up all the veggies.
When macaroni has cooled and drained well mix in the dressing (add all of it if you like very creamy salad.
if you don’t like a lot of dressing leave out about 1/2-3/4 c of the dressing.
Remember that as it sets it will soak up some of the dressing.
Refrigerate for at least one hour, the longer you let it set the better the flavor.
