The Firefighter’s Meatloaf Recipe

Firefighters all across Canada can’t get enough of this Dijon mustard and salsa meatloaf. Serve with baked beans and greens. Leftover sandwiches are great the next day.

We improvised on this, instead of bread, we used bread crumbs, 1 cup and a half, instead of barbecue sauce, we used ketchup, these were the ingredients we had on hand. Quick and easy, with pretty much all the ingredients in the fridge, this will not disappoint!

If I could give this 10 stars, I would. This is meatloaf to perfection!!! It is just yummy and everything about it is perfect, taste, texture, everything. I halved the recipe for two persons and instead of 60 + 15 minutes, I cooked this 45 + 15 minutes. Turned out perfect!

I have tried alot of meatloaf recipes and never found one that could type my Nana’s!!! But this one is really good -I didn’t change a thing and it will definitely be going into our “favorites” cookbook!

This was very good. I doubled the recipe, used homemade breadcrumbs (whole grain/french bread combo) and added about 2 cups shredded colby-jack cheese. I used a mixture of bbq sauce, Dijon mustard, Worcestershire, ketchup and black pepper for the topping and baked it as one “cake” in a bundt pan. Thanks for the recipe.

This recipe has now replaced my old meatloaf recipe. My old meatloaf recipe was too fluffy and was sometimes hard to swallow because of the fluffy texture. This meatloaf is fairly dense which is much more pleasant on the texture side of things. Plus, I’m also partial to fireman because I married one. 🙂

2 pounds ground beef

Ingredients

2 slices whole wheat bread
2 pounds ground beef
1 green onion, chopped
2 tablespoons chopped onion
1 cup medium salsa
2 tablespoons whole grain Dijon mustard
1 teaspoon Worcestershire sauce
2 tablespoons minced garlic
salt and pepper to taste
1 tablespoon barbeque sauce

Directions

Preheat the oven to 375 degrees F (190 degrees C).
Soak the bread in warm water in a small bowl. Place the beef in a large bowl. Drain bread and add to beef along with green onion, onion, salsa, Dijon mustard, Worcestershire sauce, garlic, salt and pepper. Mix by hand until well blended. Form into a loaf and place in a greased loaf pan.
Bake for 1 hour in the preheated oven. Drain off excess fat and top with barbeque (Diana) sauce. Return to the oven and bake for an additional 15 minutes.
