One of the things I remember most about my Great-Grandma Lila was eating awesome food at her house. She lived to be 95 years young and even during her senile year she still continued to cook. Cooking was something that dementia and old age never took from her. isn’t that amazing? grandma might have forgotten who I was at times but she never forgot her way around the kitchen. One of the things grandma used to make was marinated cucumber salad.
The recipe is quite simple to make but something about it just tasted better when grandma would make it. I guess grandmothers have a special touch, especially my grandmother. Anyone can make this cucumber salad with a little patience and peace of mind!
When I say peace of mind I am talking about letting all of your cares slip away before you enter the kitchen. Grandma Lila would always say to cook while feeling peaceful and your food will turn out better. I do believe she was right. Enjoy!
Nothing beats a side of marinated cucumbers on a hot summer day. However, I’ve been known to make these cukes in the dead of winter, too. They are seriously just that good, folks.
Plus, these cukes are very easy to make. My grandmother refers to this recipe as “marinated cucumber salad” but I like to refer to it as “heaven in a bowl” lol! They are so tangy. I love it! Even my picky eater children enjoy this dish and so does my husband. This recipe is going to be your new favorite.
Grandma Cucumber Summer Salad
Ingredients
3 cucumbers, peeled and sliced
1 small onion, peeled and sliced into rings
2 c cold water
1/4 c Domino granulated sugar
1/4 c Bragg’s apple cider vinegar
1/8 tsp McCormick celery salt
dried dill (optional)
Instructions
1. Layer slices of cucumbers and onion in a large bowl.
2. Combine remaining ingredients and blend thoroughly. Pour marinade over cucumbers.
3. Chill cucumbers at least 2 hours. Use slotted spoon or fork to serve chilled marinated cucumbers.
