Triple Strawberry Cheesecake Cupcakes.

These soft Strawberry Cheesecake Cupcakes have a creamy cheesecake center and fresh homemade strawberry frosting. They are always a hit at any dinner or party we bring them to.

I tried to find a good strawberry cupcake recipe and couldn’t find one, so I finally came up with one of my own that everyone loves. This recipe is good and easy.

These Strawberry Cheesecake Cupcakes have a graham cracker base topped with a strawberry cake layer, cream cheese frosting and fresh strawberries. Perfect for any birthday, Easter dinner or Spring celebration!

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Line 12 muffin cups with paper liners.
  3. Place 1/4 cup strawberries in syrup in a bowl; blend with an electric mixer until smooth.
  4. Add cake mix, vegetable oil, and milk; mix on low speed until well blended, about 2 minutes.
  5. Mix eggs, 1 at a time, into cake mix mixture, beating until each egg is fully incorporated into the batter before adding the next.
  6. Spoon about 1/4 cup batter into each muffin cup.
  7. Bake in the preheated oven until a toothpick inserted in the center of a cupcake comes out clean, about 15 minutes.
  8. Place cupcakes on a wire rack to cool completely.
  9. Blend 2 tablespoons strawberries in syrup in a bowl using an electric mixer until smooth.
  10. Beat cream cheese and butter into strawberries on low speed until smooth and creamy.
  11. Slowly beat confectioners’ sugar into strawberry mixture on low speed until icing is smooth; add strawberry extract and beat on medium for 2 minutes.
  12. Spoon icing into a piping bag fitted with a star-shaped tip or a resealable plastic bag with the corner snipped.
  13. Pipe icing onto each cupcake.
  14. Top each cupcake with sliced strawberries.
