Speed preparation time by using already-chopped garlic in jars, and look for bags of frozen chopped onions–no tears!
To warm tortillas, heat them in a hot ungreased skillet or griddle for 30 seconds to 1 minute. Or wrap desired number of tortillas tightly in foil and heat in 250°F oven for 15 minutes. Or place 2 tortillas at a time between dampened microwavable paper towels or sheets of microwavable plastic wrap and microwave on High for 15 to 20 seconds until warm.
This recipe was a little different since you did not brown the meat before adding liquid ingredients. I noticed no spices, so I added cumin and some Tex-Mex seasoning while cooking. It would have been too bland if not added. With the spices and cooking a little longer to reduce the liquid, it was good.
We really liked these! I used less ground turkey and a whole packet of taco seasoning. I also ended up having to add a bit of water b/c it seemed dry to me. I didn’t have any green peppers on hand, so I had to omit those. Served these with all the usual taco toppings. All in all, the family enjoyed this ‘healthier’ version of one of our favorite meals…Thanks for sharing. 🙂

Great recipe!! I’ll be doing this again and again. I made some changes though. Instead of turkey, I used chicken leg quarters which I boiled, then I julienned the chicken and used the same broth from boiled chicken. Also I did not use the corn because of a family member’s health issue. It turned out to be really good and I highly recommend it. For me sour cream is a must. Put it together with the chicken mixture before you wrap the flour taco.
They now have whole grain corn hard shells which, upon reading the nutrition facts, I found to be better for you than the soft shells!! You can also use 40% less sodium taco seasoning!! LOVE IT
This is very high in point value at my weight I have only 20 pts to work with. I definitely substitute the flour tortillas to a light tortilla and I would also change the cheese to a weight watchers cheese.
