Vegetable Patties Recipe

Ingredients:

  • 2 medium zucchinis, grated
  • 2 medium carrots, grated
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 2 eggs, beaten
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese (optional)
  • Salt and pepper to taste
  • Olive oil for frying

Instructions:

  1. Prepare the Vegetables: Grate the zucchinis and carrots. Place the grated vegetables in a clean kitchen towel and squeeze out excess moisture. Transfer to a large mixing bowl.
  2. Combine Ingredients: Add the chopped onion, minced garlic, parsley, dill, beaten eggs, breadcrumbs, and Parmesan cheese (if using) to the bowl. Season with salt and pepper to taste.
  3. Mix Well: Mix all the ingredients until well combined. The mixture should be sticky and hold together when shaped into patties. If it’s too wet, add a bit more breadcrumbs.
  4. Form Patties: Take a handful of the mixture and shape it into a patty. Repeat until all the mixture is used.
  5. Heat the Oil: In a large skillet, heat olive oil over medium heat.
  6. Cook the Patties: Place the patties in the skillet, being careful not to overcrowd them. Fry for 3-4 minutes on each side, or until golden brown and crispy.
  7. Drain and Serve: Remove the patties from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve warm with your favorite dipping sauce.
