“These are the peach cobbler egg rolls that became popular on TikTok! When I saw this idea on Tiktok, I was very excited to create my own version. They are a simple delight, with all the tasty flavors of a large peach cobbler, enclosed in a crunchy fried crust. And we will serve them with an easy vanilla bean dipping sauce, turning them into a great dessert for visitors or special events!”
INGREDIENTS (For 10 sheets of egg roll wrappers)
- 1 big can of sliced peaches, drained
- ¼ cup of water
- ¼ cup of granulated sugar
- 1 tablespoon of cornstarch
- 1 teaspoon of vanilla extract
- Extract juice from a fresh lemon.
- 1 Egg, well mixed
- 2 tablespoons of melted butter
- ½ cup Brown sugar (1 tablespoon + 1 teaspoon of cinnamon, separated)
DIRECTIONS
- Heat the oven to 400 degrees.
- Cut the peaches into pieces and put them in a pan on the stove over medium-high heat.
- Mix the cornstarch with the water and then pour it into the pan together with the sugar. Mix until the sugar dissolves and the mixture becomes thicker.
- Add the vanilla, 1 teaspoon of cinnamon, and a bit of fresh lemon juice.
- Take the mixture off the heat and allow it to cool.
- Put an egg roll wrapper on a flat surface and add some of the filling to one side.
- Fold the edges and roll up the egg roll.
- Use a small amount of egg to seal the egg roll shut.
- Put the egg roll in the melted butter.
- Mix the brown sugar and 1 tablespoon of cinnamon in a bowl. Then, coat the egg rolls in butter and roll them in the cinnamon sugar mixture.
- Put the egg rolls on a baking sheet lined with parchment paper and bake for 15-20 minutes until they are golden and crunchy.
