I used to hate cabbage until I tried fried cabbage a few years ago and I really enjoy it now. I made it last weekend for a St.Paddy’s day potluck and there were no leftovers, which was awesome! It goes really well with corned beef, pot roast, grilled chicken and even pork chops.
Now, fried cabbage can be made in various ways but my favorite way involves pan frying it with bacon and onions. I also like to keep the spices very simple and only use salt, pepper and a bit of paprika to add a smoky flavor.
Ingredients:
5 slices turkey bacon
2 tablespoons butter
1 head cabbage, sliced into thin strips
1 small yellow onion, diced
1 teaspoon salt
1 teaspoon ground black pepper
1 pinch white
Directions:
Place the turkey bacon in a large pot or Dutch oven and cook over medium-high heat, turning
occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper
towels and reserve drippings in the pot.
Melt butter in turkey bacon drippings in the pot over medium heat. Stir cabbage, onion, salt,
pepper, and sugar into butter and bacon drippings. Cover the pot. Cook, stirring
occasionally, until cabbage and onion are tender, 15 to 20 minutes. Crumble bacon into
cooked cabbage.
Notes:
– You can also make this side dish vegetarian by omitting bacon. Make sure to use 2-3 tbsp unsalted butter. – Leftovers can be stored in a sealed container in the fridge for up to 2 days.
