These Lemon Bars can be store in the refrigerator for 2-3 days, but I promise they’ll never last that long within arm’s reach like that!
In the freezer:
To make them last beyond a couple hours after you slice them, store in an airtight container in the freezer (I like to put wax paper between the layers) for up to 3 months.

- Wonderful! I took these to a party, cut into 1.5″ squares, and they were a hit. I had trouble pressing the crust into the pan, and gave up half-way up the sides, which turned out to be the perfect height! The sweet white chocolate really balances the tartness of the lemon and the cream cheese. Great base recipe. Outcome was great.
- AMAZING! These are much better than regular lemon bars. I loved everything about this recipe, even the crust was perfect. The only thing I did differently was to add 1 tsp. lemon extract to the lemon filling. I will be making this again.
- For the crust part I broke up a roll of sugar cookie dough. With floured fingers, press dough evenly in bottom of pan to form crust. Than I baked it at 350 for 15 to 20 minutes or until light golden brown. Then added the rest. A little easier and delish!

Today’s recipe for Lemon Cheesecake Bars are a favorite of my family and just about everyone who tries them.
I received this recipe from one of my wonderful blog readers. When Rachel shared it with me, she promised me they would become my new favorite lemon recipe. She was right! The cheesecake layer makes for a much creamier and yummier lemon bar! It’s a fun, dressed up version of the classic lemon bar.
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup confectioners’ sugar
- 3/4 cup unsalted butter, cut into cubes
- 4 eggs
- 1 1/2 cups white sugar
- 1 tablespoon all-purpose flour
- 1 tablespoon lemon zest
- 1/2 cup lemon juice
- 2 (8 ounce) packages cream cheese, softened
- 1 cup white sugar
- 2 eggs, beaten.
Directions:
- Preheat an oven to 350 degrees F (175 degrees C). Lightly butter a 9×13-inch baking dish.
- Whisk together 1 1/2 cup flour and confectioners’ sugar in a mixing bowl. Cut in the cold butter with a knife or pastry blender until the mixture resembles coarse crumbs. Press the crumbs into the bottom and up the sides of the prepared baking dish to form a crust.
- Bake in the preheated oven until golden brown, 15 to 18 minutes. Remove from oven, and set aside.
- Whisk together 4 eggs, 1 1/2 cup sugar, 1 tablespoon flour, lemon zest, and lemon juice in a bowl. Pour lemon mixture into the prepared crust. Skim off any bubbles from the surface of the filling. Mix the cream cheese and 1 cup sugar in a bowl until well blended. Whisk in 2 eggs, then spread over the lemon mixture. The mixtures will separate during baking.
- Bake in the preheated oven until the filling is set, about 30 minutes.
