There’s nothing quite like a warm bowl of soup on a cold and rainy night. One of our favorite soups to make on a cold night is Lasagne Soup. This unique recipe combines the comforting flavors of lasagne with the convenience of a soup, making it the perfect meal to warm you up from the inside out.

One of the unique aspects of this recipe is the use of mini lasagne noodles, also known as mafalda. These little noodles look like mini lasagne and give the dish a fun and unique twist. They’re the perfect size for a soup and add an interesting texture to the dish. Plus, since we only use 6 oz of the noodles, this recipe is sure to be a hit with everyone in the family.

The recipe starts with browning the ground beef or sausage in a large pot or Dutch oven. We like to use ground beef or Italian sausage in this recipe, but you can use whichever you prefer. Once the meat is fully cooked, we add diced onion and minced garlic to the pot and sauté for 2-3 minutes, until the onion is translucent. This adds a nice depth of flavor to the soup.

To reheat, simply heat it up in a pot on the stove or in the microwave. This recipe is also freezer-friendly, you can freeze it for up to 3 months. Defrost in the refrigerator overnight and reheat in a pot or in the microwave before serving.

For a vegetarian version, you can use vegetable broth and substitute the ground beef or sausage with mushrooms or tofu. This will also change the nutrition facts, but it will still be a delicious and comforting meal.
