Meatball Potato Casserole – Its simple preparation and fresh ingredients make this casserole a real treat, not to mention a recipe the whole family will love.

For the meatballs:

2 lbs ground meat
7 oz bread crumbs
½ bunch fresh parsley
1 large onion
1 egg
1 garlic clove
1 tsp cumin
1 tsp thyme
1 tbsp cayenne pepper
salt & pepper

Meatball Potato Casserole

For the sauce:

3 tbsp oil
1 garlic clove, diced
13½ fl oz tomato puree
1 tsp cumin
1 tsp paprika
1 tsp cayenne pepper
1 tbsp sugar
salt & pepper

Here’s how:

1. First prepare the meatballs. Mix the ground meat, bread crumbs, fresh parsley, diced onion, egg, diced garlic clove, and spices together in a bowl. Once everything is thoroughly mixed in, create several small, flat balls.

2. Then peel and slice the potatoes.

3. Line a casserole dish with alternating rows of potato slices and meatballs, as shown in the video. It’s best to start with the potatoes on the outside and work your way in to the middle.

4. Pour the oil in a pot and sweat the garlic. Add the tomato puree and spices and stir everything together. Pour the finished sauce evenly over the meat and potatoes.

5. Garnish the casserole with chili peppers and halved cherry tomatoes and bake for 45 minutes at 390°F.
