Island Pecan Pie

Ingredients:

  • 1 pie crust (store-bought or homemade)
  • 1 3/4 cups sugar
  • 1 cup chopped pecans
  • 1 cup crushed pineapple (drained)
  • 1 cup grated coconut
  • 1/2 cup melted unsalted butter (1 stick)
  • 5 eggs (room temperature)
  • 1 tbsp cornstarch
  • 1 tbsp flour
  • 1/4 tsp salt

Instructions:

  1. Preheat oven to 300°F.
  2. In a large bowl, mix sugar, eggs, cornstarch, flour, and salt until well blended.
  3. Add melted butter, then gently mix in pecans, pineapple, and coconut.
  4. Pour the mixture into the pie crust and press the edges.
  5. Bake for 55 minutes, cover with foil, then bake for an additional 15-20 minutes until firm.
  6. Cool, then decorate with whipped cream and toasted coconut. Enjoy!
