Ingredients:
4 large sweet potatoes
1 can of bean mix (310 grams)
1 teaspoon cayenne pepper
2 ripe avocados
4 eggs
coriander for garnish
pepper and salt
Preparation:
Preheat the oven to 160 degrees. Cover a baking sheet with baking paper.
Cook the sweet potatoes in the microwave for 8 – 10 minutes until they are tender. Then carefully cut across, not completely!
In the meantime, heat a frying pan over medium-high heat. Add some olive oil. Drain the bean mix and rinse well until no more bubbles come out. Then add the bean mix to the pan and fry briefly. Then add the cayenne pepper and salt and pepper and stir well.
Place the sweet potatoes on the baking sheet and fill them with a total of half of the baked beans. Flatten the other half of the bean mix with a fork and prepare for later.
Break the eggs over the sweet potatoes, so that the eggs end up in the sweet potato as much as possible. Do you find this too complicated? Then bake 4 regular eggs in a frying pan.
Slide the baking sheet into the oven and bake the eggs for 8 to 10 minutes.
In the meantime, mash the avocados with some pepper and salt until you have a sauce.
Serve the stuffed sweet potatoes with the avocado mash, the baked beans and some coriander.
