Chocolate Mint Brownies

Allow parchment paper to hang over the edge as handles for later use. In a bowl, melt together the semi-sweet chocolate chips and the butter in the microwave in 15 second increments. Stirring with a spoon between each time. This should not take longer than 1 minute. Allow the chocolate to cool slightly before adding other ingredients. To a large mixing bowl add the melted chocolate, eggs, cocoa powder, sugar, and extract. Mix until well combined. Add the flour and mix until incorporated. Pour into the pan and bake for 30 minutes. Remove from oven and allow to fully cool right in the pan for about an hour. For the mint layer- In a mixing bowl using a hand mixer, beat the butter, cream cheese, heavy whipping cream, mint extract, and food coloring until combined. Add the powdered sugar and mix again with the hand mixer until smooth and frosting like in consistency. Spread the mint mixture using an offset spatula onto the cooled brownies. For the ganache- In a mixing bowl microwave the chocolate and butter in the same manner as with the brownies. Once a ganache has formed, allow to cool slightly. Then pour onto the mint topping and spread evenly with an offset spatula. Refrigerate until set, about an hour.
