Egg Casserole

* 9 large eggs

* ½ cup heavy cream

* ⅓ cup white onion finely diced

* 1 tablespoon butter

* 1 cup cheddar cheese shredded

* 1 ⅓ cups beef diced

* ½ cup green pepper or red

* salt & black pepper to taste


Preheat oven to 400°F.

Cook onion in butter over medium heat until softened. Cool.

Whisk eggs and cream. Stir in remaining ingredients.

Pour into a greased 9×9″ casserole dish.

Bake 30-35 minutes or until a knife inserted in the center comes out clean.
