Fruitcake Cookies

I used 7 oz of dried fruit (apples, plums, apricots) and diced it in small pieces in place of candied fruit. I also only used peacans that my daughter curshed in a sandwich bag. My daugher doesn’t eat fruit cake of any kind, but ate these cookies. There is only a dozen left. A definate add to my recipe list.

This recipe is a keeper! I didn’t have candied pineapple or hazelnuts and they were delicious! Will try this again using all of the ingredients. I got 4 1/2 dozen from this recipe.

After reading all of the rave reviews I decided to make a double batch right off the bat. The day before, I made a double batch of the fruit and nut mixture using dark rum and let it sit overnight. Next day I decided to make two separate batches of dough as I knew a double batch would be too much for my mixer. I cut the amount of cloves in half as I’m not a fan of cloves and added an extra teaspoon of dark rum when mixing in the flour as it seemed a little dry. As I was mixing the second batch , I realized there was no vanilla in this recipe, so I added a teaspoon of that to the second batch.
Just finished baking and I have to say I’m a bit underwhelmed. Just not getting a wow factor from them. I feel like they need a thin drizzle of frosting or a sprinkle of powdered sugar. If I make them again I would : add more salt, definitely add vanilla, and maybe add some cinnamon and nutmeg since I cut back on the cloves.

Ingredients:

1 1/3 C. all purpose flour
1/2 tsp. salt
1/2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. ground cloves
1/2 C. butter, room temp.
1/2 C. packed brown sugar
1/2 C. sugar
1 large egg
1 tsp. vanilla extract
1 1/2 C. chopped mixed fruit (fruitcake mix)

Directions:

Sift the flour, salt, baking powder and spices into a bowl, set aside. In a large bowl, cream together the butter and sugars until fluffy (about 3-4 minutes).
Beat in the egg and vanilla and blend well.
Begin stirring in the flour mixture, it will become hard to stir together so just use your hand to pull the dough together.
Add the chopped fruit and again, by hand work it into the dough.
Once combined, pinch off pieces of dough and roll into a 1″ ball and place on a cookie sheet lined with parchment paper.
Bake in a 350 degree oven for 14 minutes. Allow to cool on the pan for 5 minutes then transfer to a cooling rack.
