1 batch of pancake mix
½ cup maple syrup
4 Beef sausage patties
4 slices American cheese
First you need to prepare the syrup.
Line a baking tray with parchment paper
Pour the syrup in a small saucepan and heat over medium heat. Bring to a boil stirring constantly so it does not stick to the pan
When the temperature reaches 230* on a thermometer, it will become less volcanic reactive and calm down. It will also become darker
In about 2 or 3 more minutes, you will reach 265* and smell a slight caramel smell
Pour the syrup onto the prepared baking tray, Do NOT touch it. Place it in the refrigerator to cool. You can then break into pieces when it is time.
Now make 8 pancakes that are about 4” in diameter
Right after you put the batter down, place some of the crumbled pieces of the syrup onto each pancake. Pushing them into the batter so they do not cause sticking when you flip the pancake
When bubbles appear, flip the pancakes
Now top with a slice of cheese, scrambled or fried egg and sausage patty.
Cover with another pancake and eat immediately.
