I am a sucker for carrot cake. Whenever I make it, it’s usually a single layer cake with standard cream cheese frosting. You know the kind I’m talking about. The one in a 9×13 pan? Yep, that’s the one! well, guys and gals, today we are taking our baking skills a step further and delving into the world of layered cakes. Not only will this carrot cake be layered but the standard cream cheese frosting will be spiced with pineapple. Yummo!
I found this cake quite easy to make and it was done in under an hour! I was not expecting it to be finished so soon. I thought maybe it would take me all afternoon to make but nope. You folks are gonna love this recipe.

You guys, this is the first layered carrot cake that was actually easy for me to make! Normally, I find layered cakes a daunting task to conquer…not this one. You can have this little gem prepared in 30 minutes! The finished product in 45 minutes! I think that is awesome. This cake is super delicious, too. I mean, it has pineapple cream cheese frosting for heaven’s sake! Talk about a yum fest in a cake pan! You’ve gotta make this.

2 1/2 cups peeled and finely grated carrots (9.5 oz.)
