Maple-Brown Sugar Oatmeal Breakfast Bars

I was looking for a way to have my oatmeal on the go in the morning. I used 3 cups of oatmeal because I want that fiber. I did not use brown sugar, but the 1/4c of white as others did. I also subbed applesauce for the oil. I added some dried cranberries. I really liked how it came out not overly sweet but sweet enough. It came out nice and moist too. Would definitely make this again.

In general it turned out well but they weren’t crunchy and tasted more like a pie. I added only half cup of milk instead of whole cup and next time I would add even less. I also added rasins, dried cranberries, pumpkin seeds, sunflower seeds and actualy all seeds I could find at home that time. And last thing to mention – I used one big spoon of Honey instead of sugar. And the taste was super good.

Ingredients:

2 1/2 cups old-fashioned rolled oats
1 cup milk
1/2 cup dark brown sugar, packed
1/3 cup pure maple syrup
1/4 cup coconut oil, melted
2 eggs
1 1/2 teaspoons cinnamon
1 1/2 teaspoons baking powder
1/4 teaspoon salt

Preparation:

Preheat oven to 350°F and lightly grease an 8-inch square baking pan.
In a medium bowl, combine milk, maple syrup, melted coconut oil, eggs, and brown sugar and whisk to combine.
Add oats, cinnamon, baking powder, and salt to bowl and stir until incorporated. Pour batter into prepared pan.
Bake in oven until edges are golden brown and center has set, about 30-35 minutes. Remove from oven and let cool before slicing into bars and serving. Enjoy!
