Meatloaf Grilled Cheese Sandwich

I love grilled cheese sandwiches AND I love meatloaf sandwiches, so I knew this was gonna be a winner! Super simple to make and great flavor combo. I think next time I’m gonna make it with all the cheese on the inside b/c for some reason, I felt that the cheese on the outside made the bread soften up. I will def be making this yumminess again! Thanks for sharing. 🙂

Great combination of two American classics! I had leftover meatloaf from “Cottage Meatloaf” from this site and since I was down to my last slice I thought I’d give this recipe a try and I’m glad I did. I typically have my meatloaf sandwich cold so this was a nice change of pace. I used thick cut white bread and opted for a mayo vs. mustard. I left the cheese off the outside of the bread as I thought that as a bit of cheese “overkill”. It went great with a side of kettle cooked chips and a dill pickle. If you love meatloaf and you love grilled cheese this recipes is a definite must try!

Ingredients:

 

1 slice leftover meatloaf

1 tablespoon margarine

2 slices bread

1 teaspoon ketchup, or to taste

3 slices Cheddar cheese

1/2 teaspoon prepared yellow mustard, or to taste (optional)

 

Directions:

 

Place meatloaf on a microwave-safe plate; cook in the microwave on High, 30 seconds at a time, until heated through.
Melt margarine in a non-stick skillet over medium heat. Place both bread slices in skillet over melted margarine. Build sandwich on bread slice in this order: ketchup, 1 slice Cheddar cheese, warm meatloaf slice, and mustard. Flip second slice of bread over onto sandwich; cook until bottom of sandwich is lightly browned, about 2 minutes.
Flip sandwich with a spatula and place 1 slice Cheddar cheese on top; continue cooking until cheese melts slightly, about 1 minute. Flip sandwich over and lay remaining slice of cheese on top; cook until cheese on the bottom of sandwich is melted and crisp, about 2 minutes. Turn sandwich over; cook until cheese is melted and crisp, about 2 minutes.
