  2. Cook Tapioca: Over medium heat, bring the mixture to a simmer, stirring constantly. Reduce the heat to low and cook, stirring often, until the tapioca pearls are almost completely translucent (about 30 minutes).
  3. Whisk Eggs and Sugar: In a separate bowl, whisk the eggs and sugar together until well combined.
  4. Temper Eggs: Slowly pour 1 cup of the hot tapioca mixture into the egg mixture, whisking constantly to temper the eggs.
  5. Combine Mixtures: Pour the tempered egg mixture back into the saucepan with the remaining tapioca mixture, stirring constantly.
  6. Thicken Pudding: Cook over medium-low heat, stirring constantly, until the pudding thickens (about 5-10 minutes). Do not let it boil.
  7. Add Vanilla: Remove from heat and stir in the vanilla extract.
  8. Chill: Transfer the pudding to a bowl and press plastic wrap directly onto the surface of the pudding to prevent a skin from forming. Chill in the refrigerator for at least 1 hour.
