INGREDIENTS:
- 1 small watermelon, cubed
- 1/2 c. packed mint leaves, plus more for garnish
- 1 tbsp. granulated sugar
- 1/2 c. lime juice
- 1 (12-oz.) can seltzer
- Lime slices, for garnish
DIRECTIONS:
- Place watermelon cubes on a small baking sheet and freeze until completely frozen, at least 1 hour.
- In 4 glasses, divide mint, sugar, and lime juice. Using the bottom of a wooden spoon, muddle mint.
- Add frozen watermelon as ice cubes, then top off with seltzer.
- Garnish with lime wedges and mint to serve.
