White Almond Cake

Ingredients

+Basic sponge cake (x2)
°200g flour
°200g sugar
°1 C. teaspoon vanilla extract or 1 sachet of vanilla sugar
°1 C. baking powder
°4 medium or large eggs
°125g unsalted butter
°1 pinch of salt
+Trim :
°1 jar of jam of your choice, without pieces
+Decoration:
°850g white sugarpaste
°silver sugar pearls

Directions

Make 2 vanilla sponge cakes according to my recipe
Cut the cakes in 2 (you get 4 cake discs), even out the surfaces so that your cake is straight!
Garnish between each circle of cake with the jam of your choice or spread
With a kitchen brush, brush well all over the top and the outline of the cake, insisting well on the edges at the top
Knead your sugar dough to heat it and give it flexibility
Sprinkle your work surface with icing sugar and roll out your sugar paste 4 or 5 mm thick, you must have a shape large enough to cover your cake
Gently roll up your sugar dough on the rolling pin, and place it centered on the cake, as in the video, stretch the sugar dough and smooth the top and edges, cleanly cut off the excess dough
With the diamond patchwork, draw diamond shapes on the outline by pressing gently, then go over the lines with the notched roller to have a quilted effect. If you don’t have a diamond patchwork, you can trace directly with the roulette by applying yourself 🙂
To glue the pearls at the intersections, it’s easy: with a small brush put a dab of water and press the pearl against it, it will stick
Finally make the knot as described in the video, and it’s over 🙂
