To make flourless cider, you’ll need 2 eggs, 2 tablespoons of sugar, a pinch of salt, 250 ml of kefir, 250 g of semolina, 1 tablespoon of baking soda, apple (or other fruit) filling, and frying oil.

Start by preparing the dough. Beat the eggs, sugar, salt, and vanilla in a bowl. Add the kefir and mix well. Then, add the baking soda and mix again. Slowly add the semolina to the dough until it becomes soft.

For the filling, cook some apples in butter and sugar until soft and golden brown.

To make the crepes, spread the dough into a baking or plastic bag, then heat a pan over medium heat and lightly oil it. Load small portions of the dough onto the pan and top each circle with the apple filling. Cover with another layer of dough and fry until golden brown on both sides.

You can add a teaspoon of cinnamon to the dough for extra flavor and texture. Feel free to use other fruits like pears or strawberries, and you can substitute kefir with plain yogurt. These pancakes can be made in advance and reheated in a toaster oven. Enjoy your gluten-free treat!
