Cherry Cheesecake Bites

I receive all sorts of requests for recipes. One reader wanted me to make a lighter version of cheesecake.

Cheesecake? Nooooooo.

I am not a miracle worker and I am not willing to use low-fat versions of the ingredients to achieve a “cheesecake like” cheesecake.

I did do a small cheesecake that was appreciated. But, I have never attempted to make a BIG low calorie cheesecake – and neither should you.

Instead, do something much more innovative. Make these Cherry Cheesecake bites in all of five minutes. Cherries are in season right now (and I found them on sale at my local grocery store).

Wash them, dip them in a mixture of cream cheese and powdered sugar, dip them again in mashed graham crackers – and you got a treat that will hit that cheesecake sweet spot.

You can refrigerate these for a party later in the day. I would eat them the same day that I make them because the graham crackers will get soggy.

Cherry Cheesecake Bites

Ingredients:

1 block of Philadelphia Cream Cheese
1 cup powdered sugar
jar of or fresh cherries
1 box of Graham crackers

Instructions:

Blend your softened cream cheese and powdered sugar.
Grind your graham crackers (Manual Food Processor to the rescue!)
Dip your cherries in the cream cheese mixture and then into the graham crackers.
Voila! Done in minutes!
