Texas Ranch Potato Salad

This was good, a nice change from the regular potato salad, however I felt it was missing something. Maybe green pepper or celery or cheese? I also pan fried my turkey bacon and just used mayo with the ranch dressing. Will have to play with, but I would definitely try. It came out very well. Maybe the cheddar cheese will do the trick as others have suggested.

Rave reviews from everyone in the MOMS Club of Abingdon. Excellent and extremely easy! I let the marinade sit over night and used some of those real bacon bits instead of real bacon and still came out great!

This is awesome. I made it at a family reunion and everyone wanted to recipe. Per other suggestions I used half mayo and half sour cream. I also did not let it sit 2 hrs. Maybe a half hour. The bacon was crispy which everyone thought added to the salad. LOVED IT!

I don’t usually review recipes, but I thought this one deserved it. If anyone is hesitant to try this, don’t be. I took a family poll try this recipe or my tried and true family favorite mayo with mustard and egg potato salad. Everyone picked the usual, so I made the ranch potato salad instead.

EVERYONE loved it! Here are some changes I made for my family: 1/2 mayo, 1/2 sour cream; through in a little white vinegar (2 Tbls) because we like ours to have a little zip; also added some heavy cream because I had it and I needed to loosen up the dressing a little bit; didn’t have a lot of green onions so I used sweet onions; lastly I used turkey bacon. Honestly, I will take this to the 4th of July celebration. I am usually asked to bring my potato salad, but this year I am going to bring this potato salad. It is that good.

Ingredients:

1 (1 ounce) package ranch dressing mix
2 cups mayonnaise
3/4 cup chopped green onion
1 pound turkey bacon slices
5 pounds unpeeled red potatoes

Directions:

Bring a large pot of lightly salted water to a boil. Add whole potatoes, and cook until tender, 15 to 20 minutes. Drain, run under cold water to cool, and chop into 1 inch cubes.

Transfer to a large serving bowl, and refrigerate until
completely chilled, about 2 hours.

In a small bowl, stir together the ranch dressing mix, mayonnaise and green onion. Cover, and refrigerate for about 2 hours to blend flavors.

Wrap turkey bacon in paper towels and place on a plate. Cook in the microwave until crisp, about 15 minutes depending on the power of your microwave. Cool.

Stir the mayonnaise mixture into the bowl of potatoes. Crumble bacon into the bowl, and stir to distribute. Serve.
